Well, you see, the "de Méndez" is a convention, not a legal change. So, my name is not legally "de Méndez", which is why it's never come up. it would only be used when referring to me in any formal sense (like, say, on a wedding invitation). One would always call me Señora (or Mrs.) Méndez, even though that is not my legal name, whenever one would be inclined to address me as "Mrs.", like when my students address me, for example.

Women do not take the last name of their husband when they marry in Mexico. Family names are passed through the children, each parent contributing the first of their two last names (Father's first, then mother's) (which is how someone might end up with the last name "Pérez Pérez") ...therefore it is not until the "grand" generation that the woman's family name disappears completely.
